Definitive country wine elderberry wine

Just come to check my wine and my instructions have got damaged, now my wine has been at a steady 1.000 so I've added the stabiliser with 2 spoons of water. That's where my instructions stop I've got the finings but when do I add them 24 hours after ? also what do I do dump it all in I can see summat about stirring it lots over 24 hours anyone. And how soon should I bottle it when the finings go in

Add the finings 24 hrs after adding the stabiliser ( I usually rack the wine off in to a fresh demijohn berofe adding the stabiliser)
Once you add the finings, shake it for a minute or so every few hours (releasing the excess co2 given off), this helps the finings work better and also degasses the wine.
Leave until clear.
Taste.
Back sweeten if required by desolving X amount of sugar in as little boiling water as possible and add to the wine.
X = 250g of sugar for a sweet wine, or 125g for a medium

swirl the demijohn around to mix the sugar / wine then bottle.

Also it's dark red so erm yea how the hell can I tell if the finings are done

Leave it at least a week before bottling, if you are not in a hurry rack it into clean demi-johns and laeve even longer, it matures better in bulk. check the bottom of the demi-john about once a week to see if there is anything dropped out, if so rack. when it is ready, bottle it and if you can leave it, the longer the better for a red. 1 year if possible, (now you're horrified) honestly though, it'll be better for it.
Can't rush a good red wine.
