Hey everybody,
Sorry if this is in the wrong place but does anybody make soft drinks while their brew is fermenting? I'm looking for a few decent recipes for syrups I could use as I make fizzy water in the empty corny (about 25psi) when I have nothing left to drink. I've found a number of syrup recipes online but they all seem to be from the states and require fruit concentrate which I haven't seen over here.

Not done it but have considered it a few times, as we seem to buy a lot of diet coke cans here, the cocacola syrups come in corny sized quantities in plastic bags these days.. so are impractical, even if we did buy one, find a place to buy one..
But any squash,cordial, or juice mix should work ok, and you can test small quantities, you will run thru a a bit more gas used if you only carb 2l or so in a corny but its doable,,
generally tho pop wants a higher carbonation level than beer and needs a lower serving temp so if chilled in a beer fridge may not be practical, pop conditioned to beer levels and served at beer temps may not be so palatable?..

Lemonade is a good place to start. It's also the base for a lot of ice-lollies and flower cordials.
Quantities that spring to mind are the zest and juice of 10 lemons, boiled up with about 500g caster/brewing sugar. Use sterile/brewing water to let that down to a workable viscosity for the basic cordial, which can be stored in the fridge or freezer and diluted on demand.
Where necessary, you may wish to strain out the zest - but the longer it stays in contact with the juice, the better it tastes.
Don't about a corny but if you can do non alc in a normal keg, if you're careful...
Method (a) very easy but needs to be consumed in 4-5 hrs
Put something like the above in the keg and make it about the right strength to drink. Add a bit of yeast a couple of hours before opening. It will be fizzy and pretty-much alc free for a 1 day party.
Method (b) technical but remains stable for months.
Again, to keep it "alc-free" (i.e. below 0.5%), you could brew it under pressure with a potential alcohol of 0.5% i.e. neat lemon, probably (*). When the fermentation's settled down: chill the brew to ~1°C and filter out the yeast before adding appropriate sugar later. Keeping it cold will prevent gas-phase substances (e.g. CO2) from leaving the liquid-phase.
(*) 0.5% ABV in 20 litres is 170g of brewing sugar, assuming complete metaboliatin of sugar, so adjust the recipe of the cordial accordingly.
There may be others on JBK, who know more about filtering and how best to prevent yeast from re-inocculating a sweetened drink, while maintaining carbonation...?

soda stream sell small bottles of syrups, available in most large supermarkets. many flavours available.
another one is the polish syrups that are often used to make brews, they may make a drinkable soft drink. you can get a cola version too.
