Hi,
I've attempted to make my first batch of Cider from pressed apples - my only knowledge of brewing anything other than tea is from a couple of batches of elder flower wine and the cider where you chop up a load of apples and leave them in water for a while.
Anyway - It looked fine before I went away on holiday for a week but now it has something that resembles a brain floating around in the top of the demijohn.

I'm presuming its because of the wild yeast?

I was hoping it'd be the malolactic fermentation pellicle, but it looks wrong for that
Crossed fingers, you used real apples, so fairly high pectin content: it's apple jam.
Try chucking in 2 or 3 tsp of pectolase, see if it goes away.

The brewing shop near me was closed yesterday so I couldn't get any pectolase from anywhere.
When I came down stairs this morning the whole 'brain' bit had fallen to the bottom of the demijohn and looked like it was breaking down into sediment.
I reckon I'm going to leave it as it is and see if its drinkable when the time comes.
