Ive been given a box of root ginger about 30 ounces in weight and its still fresh, I like a wine with akick,, need a good recipe for ginger wine if you have one please,,, many thanks Ian
I am like a good wine , slow to get going but I always finish !!!!!

The only ginger wine recipe I've tried was from CJJ Berry's book, 130 New Winemaking Recipes;
For one gallon;
80g Root ginger
2 Oranges
2 Lemons
225g Raisins
1.3kg Sugar
Yeast & nutrient
-Peel the oranges and lemons (avoiding the white pith) and put them in a bucket with the chopped raisins.
-Bring 6 pints of water to the boil and add the sugar and well crushed ginger. Boil for half an hour.
-Pour this onto the peel and raisins.
-Cool to 20 degrees and add yeast and nutrient.
-After 10 days, strain off into a demijohn and add an airlock.
You could add more ginger as you like a kick, I seem to remember this was quite warming but not fierce. I did make chilli and ginger wine once which was a different story!
