Actually, Carol and my stepson are going to drink it. :P

She can't drink beer any more, since she was diagnosed with coeliac disease (and Simon's not a beer fan).

Well, mines still glugging away happily! I'm hoping it starts to clear later this week or early next so I can bottle it in time to be ready for Xmas.

Hmmm. I feel the need to get some TC going... I have some yeast stored in the fridge in PET bottles so might get one of them going. Probably be next week before I can slip some AJ into the shopping trolley but TC here we come :pink:

It's down to about sg of 1.005 now. 8)

I've racked it ready for bottling later this week when I have more time.

Hi Jim,

I meant to post this is another thread but I can't find it.

I did a few TC's in July and Early August using Tesco's cheap apple juice and bread yeast.

Initial results were foul, and most of it ended up being thrown. There was a very harsh alcoholic taste and they were too dry and there was little apple flavour.

We had 2 bottles left from the last batch at the beginning of August.

On Sunday I decided to try one as I had promised a couple of the forum members a few weeks ago

After mild chilling, roughly 45 min in the fridge I poured the bottle.

First impressions little or no fizz despite being primed.

Next I stuck my hooter in the glass and.....bang...apples
Strong as you like.

To taste, we'll, slightly carbonated...no bad thing, loads of apples coming through and semi sweet...very nice

It certainly was better than Merrydown, Strongbow or Bulmers.

I take everything back that I've said about TC.

It looks like, just as in beer, maturation is the key 8)

Did you use ale yeast this time? I have only ever heard bad results from using bread yeast.....

I am happy to say that my TC is fermenting again nicely. Should hopefully have a great crystal clear cider ready for christmas. Only downside is that none of the cinnamon flavour seems to bed getting through (2 sticks).

Maybe once things have quietend down this will given the sticks a chance to do their thing :) I doubt it though.

I used Gervin general purpose wine yeast for mine. I had a taste and although it's quite dry, the taste seems fine (I'm not a cider connoisseur, mind).

No, the wife got the same stuff Jim's used

I'd stick a bottle away for a month or 2 PoP and see if the cinnamon comes through like the apples did for me

Well I've reanimated one of my stored yeast bottles (WLP002) tonight by pouring off the liquid and then mixing the yeast with some apple juice and putting into a glass milk bottle with an air lock...

I fancy doing this.

Can I use any apple juice and when you say top up after initial fermentation do you mean water or juice?
