You won't regret it boys this yeast is the mutts nuts for TC :D
Des I am now keeping this yeast on the go constantly by brewing 1 gallon batches and topping up the keg with it :shock:

Anyone tried a safale 56 on the TC? I know the WLP is better, but until I can pick some up...do you think the 56 will ferment dry and leave any apple flavor?

Well, I've managed to try it out without answering my question. I used US 56 chico strain to do one batch with cheapy apple juice from wal mart. Then used the WL with some nice straight up juice from the fancypants grocery. The second batch was definitely the nicer of the two, but can't tell whether it was the yeast or the juice? :?

After bottling, I dumped another 1 gallon of fancypants apple juice and 1 quart of straight dark cherry juice. We'll see how that one comes out.

Hi monk.
Good results 8)
IMO it is the WLP775 yeast that helps the appleyness(sp?) come through.
I have used it with cheap concentrate and fresh pressed apple juice and although there is a quality difference in the final cider, even the cheap juice makes great cider :D
That batch with the cherry juice sound great 8)

Off on a trip soon and have been checking out a few HBS in the places I will be staying.

They have Black Rock Cider yeast.
Anyone used this one?.

Will pick up some packets as it has a good write up.
