Re: lidl red wine
I did a lovely 'Bluberry Blush' from Tesco, 3 cartons of 100% pure red grape juice and 1 of Blueberry Juice, had my first glass today and its gorgeous, more a rose and very palatable, unfortunately it ebded up at nearly 17% ABV due to a measuring error

Re: lidl red wine
Just tried some of my Sunpride red and I'm impressed. Tastes like a dessert wine, probably a bit too strong but it has a lovely flavour and surprisingly looks like a red wine instead of a rose. Ill post a picture later (if I'm not too cabbaged!)

Re: lidl red wine
Think I am going to give the lidl wine a go, although probably will be sainsburys or tesco wine as they are nice and local, could go to waitrose but that may be a bit extravagant. Might start with a gallon of white and a gallon of red, got three DJs sitting empty begging for something to do.
Can I just clarify what to do, do you just chuck all the ingredients, grape juice, sugar, citric acid, nutrient, tannin, pectolase and yeast into a DJ and leave it to ferment happily away, then once its finished add kwik clear or something similar and bottle it - then sit back and enjoy, or is it more complicated than that. Won't be able to get to the LHBS until next friday so have just over a week to take onboard all advice.
Thanks

Re: lidl red wine
if its any help, My Sainsburys red grape wine tastes pretty good, and is plenty strong enough...
The White grape on the other hand tastes like piss and could take some maturing.
The red grape is well worth doing again though, its nice to add a bit of fresh grape juice to your glass too for the sweeter tooth
I'll probably leave out the Citric Acid next time though as its plenty tangy without it.

Re: lidl red wine
drmick,
I dissolved the sugar in some of the warmed grape juice in a saucepan first, then put all ingredients into dj and gave it a shake.
Left it to ferment for about 5 days but I then racked it into second dj, topped it up with grape juice and left it for another 5 days(it started fermenting again) before adding kwik clear and bottling it two days later.
I de-gassed all the bottles too as there was a lot of dissolved CO2 in the wine.
Apparently Aldi have red and white grape juice on offer at 56p/litre, although i've not been into a store myself so maybe someone can confirm this?

Re: lidl red wine
Got carried away last night and ordered all the chemicals/additives, then went to Tesco on way to work and got 10L of grape juice, 5L red for one batch and 3L white grape juice and 2L apple and elderflower juice for a second batch (pdtnc said the white tasted like piss so thought I would add a bit more flavour and see what happens). Just have to sit and wait now for the stuff to arrive before I can get going - gives me a chance to empty a few wine bottles in preparation
Thanks for the help

Re: lidl red wine
Not in the literal sense, the white was just too bitter for my liking, and I'm a Red wine fan rather than a white... Though i hear Piss can be applied to the skin for a good complexion and apparently doesn't make you smell like homeless people (must have been either Chanel 4 or a Jeremy Vine show on Radio 2).drmick wrote:(pdtnc said the white tasted like piss so thought I would add a bit more flavour and see what happens)

Re: lidl red wine
The wine can taste odd if it has lots of dissolved CO2 in it apparently, I've been told that if you plan on keeping the wine
for any length of time it should be de-gassed.
However I've also been told that for cheap fruit juice wine it probably won't make any difference to the taste.
I decided to de-gass all but one of my bottles as an experiment.
I used screwtop bottles so I just shook each bottle up and released the cap, repeated about half a dozen times for each bottle.
Loads of gas was given off each time I did it.
When I opened the bottle that hadn't been de-gassed, it was like opening a bottle of pop.
It was pretty fizzy to drink, which was actually quite pleasant
I wonder if the fermetation had completely finished because it was so highly carbonated, but it had 7 days initial fermentation, then another 7 after racking so I think it probably had finished.
Next time I will de-gass in the demijohn after racking. There are special devices to do it, attachments for drills and all sorts of things but i'll probably
just give the thing a damn good shake.

Re: lidl red wine
You should consider that violent shaking also oxygenates the wine, which makes it go stale quicker. It's better to leave it in secondary at room temperature for a few months, then siphon into a bucket and give it a careful stir for a minute or two. Siphon back into the FV for a week with sulphite, then prior to bottling repeat the stir when you sulphite.mrbenbod wrote:Next time I will de-gass in the demijohn after racking. I make 23 litre batches and keep wine for many years this way. If you make 1-gallon batches and drink them quickly, this advice may not apply to you.
Secondary FV: As yet unnamed Weizenbock ~7%
Bulk aging: Soodo: Grocery store grape juice wine experiment.
Drinking: Evan Williams bourbon, Dewar's Scotch (white label), VO Canadian whisky. Various Sam Adams beers.

Re: lidl red wine
this fizzy bottle wine has only happened once and i suppose it must have been gas as the booze had dropped down to 1.0sg. but it was nice anyway.
i make my cider in 20ltr vats and an occasional batch of wine. i dont think i have ever had an issue with gas with these. and a laripu said my experimental 1 gallon batches never last long enough.
anyone use one of those 'de-gassing paddles'? and do they work on girlfriends? lol
