For those of you that were debating the addition of cinnamon to the great TC, I have had a go and my approach was this, 1 stick of cinnamon was simmered in 1/2 litre of apple juice for 10 minutes, the spiced apple juice and the cinnamon stick were added to the demijon and the rest of the procedure is well documented on here 8)
My opinion was that this aproach gave a cider that reminded me of apple pie :D
Unfortunately it reminded my wife how much she liked mulled cider :(
1 1/2 pints of TC 1 clementine 6 cloves stuck into said clementine one stick of cinnamon 2 cardamon pods and one slice of root ginger later and I also remember how nice mulled cider is :lol:

I have put 2 sticks into 25 pints of TC and it has made no noticeable difference. Fair enough I just put the sticks in whole without boiling...

Was dissapointed in the lack of taste - may have to try powdered cinnamon next time!

I must agree with Daab cinnamon is a delicate spice in its whole form and needs some generous boiling. My ten minute simmer of one 100mm stick left just enough flavour in a 5 L brew for me.
Powdered cinnamon is much stronger so be careful :shock:
