juice wine recipe needed!!!
Re: juice wine recipe needed!!!
right guys and girls, i put 2 gallon of this on the other day and thought id try out the adding sultanas idea. just one thing im unsure of, with having the sultanas in will i have to rack at 1.020 with it having fruit in it or will i be cool just to let it ferment out as a normal juice wine? i wasnt sure if having the wine in contact with fruit solids for too long would cause any problems

nah mate nothing is adventurous in the world of brewing! just make whatever you feel the need to (i constantly have between 10-15 brews going all the time) and you'll do good. try using a basic all fresh fruit recipe, first one i tried was strawberry which i wasnt too pleased with after maturation, guessing i didnt use enough fruit to give it a decent balence. the 4 gallons of apple wine i made tasted great even just after fermentation but i left a bit of residual sugar in the mix. stopped fermentation at about 1.010 from a 1.090 brew. not a really high alcohol level but it just tasted right at that level. just experiment and see what happens!!!!
