Ginger Beer with too much yeast?

Post by dabbles_a_bit » Wed Jan 23, 2008 7:15 pm

I have made up a DJ of Ginger beer, and used an ale yeast. However in a moment of madness activated the whole packet of yeast then pitched it. I think I was on autopilot as I normally brew 25l at a time and didn't scale down for the smaller quantity.
Will this have any effect on the GB, such as longer ferment times or make the resulting product taste bad?
if so I will ditch this one and start again.

you will be fine, let it do its thing, IF it tastes bad after being in the primary, BIN. Though you should be fine.

Just make sure it has fermented all the way out before you bottle. Ginger beer is known for bottle bombs, I'd hate to see the storage closet with some "extra" fermentation in the bottle.
