Whoever you were... you rule. My 10.2% monster turned out great and scary

I have never seen a crust like that nor have I had so much solid come flying out the bubbler for days
It was the 3l apple, 1l pineapple, 340g honey and champers yeast recipe from someone here... what a fun brew tro watch - like a lava lamp and a spent yeast layer an inch deep!

Yes sir it is you!!
It's better than fireworks night in the demi and like an epidural in the belly. I had to slip a little apple juice into the glass though... jesus' sandal was positively sodden compared to this dry monster

Well that's my APTC under way. Put my apple juice, honey, and yeast in last night and gave a bloody good shake. This morning nothing. The ale yeast I used was off a tin of Victorian Bitter (Vina). Thought this might not cope so this morning I've put in half a teaspoon of yeast (Young's stuff I keep for emergencies) and a teaspoon of yeast vit, and another good shake. Tonight I'll add the pineapple juice. Should be a splendid drop of splosh. Haven't bothered with a hydro reading as maths aint my strong point - how do you take an OG when you haven't added all your fermentables at the same time? APTC, canny abbreviation, but too sterile. Think I'll call mine Jesus Christ.

on reading this today ive been to ASDA and got one on the go now, temptation is gonna be the killer, i too have drank from the demijohn before now and if this takes 3-4 months to mature, well it dont look good

whats the full recipe? Is it as above and add water to 40 pints?
sorry for my ignorance, a beginner here trying out something other than can kits would be fun....i've 40 pints of cider on the go and would like to offer some different flaves, sound s like a goer to me.

Yep, recipe is as above. Make in a 5 ltr demi, no extra water.
Mine was still quiet at 5:30pm yesterday when I added the pineapple juice. I couldn't resist sprinkling a tiny bit more yeast in before giving it a bloody good shake. Couple of hours later and it was finally going. Grand.

I decided to do this at the weekend.
9 Ltrs of apple juice, 3 ltrs of pineapple and 3 jars of 304gram honey.
Added the yeast on sat, and its bubbling away like mad when i went in the garage this morning.
Cant wait to try it.
Do i wait for it to finish bubbling completely or do i bottle when it calms down?

If you have the means of taking a gravity reading then 1.000ish or below will mean its finished.Depending on how fizzy you want the TC to be will determine how much sugar to use in bottling,I just put a level teaspoon of granulated sugar in each bottle and it had a good level of carbonation(but I like mine not to fizzy),if you want more then use a bit more.
Condition for 7-10 days at fermentation temp, then chill and serve(but they are best after some long term storage

)
