Impatience

Post by PMH0810 » Mon Jan 19, 2009 1:47 pm

Whilst in Lidl I picked up a 450gm bottle of pitted cherries in syrup (nothing artificial on the label). I pureed the cherries and added 3 litrs of AJ (57p ltr - thanks Morrisons) and will be adding the next 1/2 ltr when things calm down.

never made a TC with real fruit before (well, other than sultanas or raisins) and I can't wait.

Is it much more of a step from this to using the same jar in wine?

I promised someone but forgot (but I will) I'd post my recipe for Nicearse and Sweet Black Angel so yer tiz - probably amongst the simplest (and therefore the best) TCs I have made

NICEARSE
4 litres apple juice
2 cans of tinned peaches in syrup pulped up
Topped up with OJ
Champagne yeast

SWEET BLACK ANGEL (its actually SOUR Black Angel)
2 litres ocean spray cranberry
2 litres red grape juice
1 jar lidl pitted cherries mushed to a pulp
Topped up with grape juice
Champagne yest

Both make very dry scrumpy type versions of bacardi breezers about 6%, primed and bottled. If I were to make them into wine I'd probably chuck more sugar in.

Not really, I use Morrisons cherry juice in a red wine kit during the secondary fermentation process, basically make a red wine kit up to 3.5 litres then after it's fermented out I top the DJ up with 1 litre of fruit juice (careful it gets lively), then I save the last 0.5 litre space in the dj for after I stabalise so I have some unfermented juice in my wine - LUSH!

I have some Lidl cherry jam fermenting in an apple and pear TC at the moment and am looking forward to seeing how that comes out. I racked it off in to a DJ today and tasted pretty nice.

I've been tempted to drop some of those cherries in to a bitter kit. Anybody done that?

I see in your signature you're drinking it now... How is it?

Ah - sorry, forgot to top up this thread.

Only two bottles in but it's Tizer red, flat as a pancake and the cherries really shine through. Sweeter than my usual TC but not by much and the addition of real fruit has added "something" not previously apparent in my TCs. Even SWMBO likes it and she hates cider.

They'll all have some fruit in from now on, even if only a grated braeburn.
