is my TC infected?
i poured 4.5 litres of AJ into a 5 litre plastic water bottle and added 1kg of sugar and some turbo yeast (just yeast with yeast nutrient).
it was fermenting away and smelled fine, but today it smelled just like my last two batches of TC that came out tasting really sour.
there are no signs of mold, it's just really cloudy from all the yeast.
the TCs that went wrong tasted of cider but really sour (i didn't dare to drink it because i thought i'd get sick).
what have i done wrong?

only done 3 TC my self.
BUT did you use chamapine or cider yeast? beer yeasts produce quite differnetl flavours.
It's to early to be very very dry, or very very anything?
I left mine for 10 days, to get to an SG of 1008, then took it off the sediment into a new container then in the house for a week before I put it on a stone floor in a shed for 2 weeks and it was fine.
Posibly sour due to the yeast taste, as it's still floating about?

ALso 1 kg of suer in 5 L is a hell off a lot of suger for the yeast ven turbo to munch trough! I put 1KG in 25L.

i've used wine yeast and turbo yeast (turbo yeast can do up to 23%) and they both came out the same, really sour and not tasting very good at all, i think they might have got infected somehow.
i only added the 1kg of sugar for the lols and only this time, i usually don't add any.

Try a batch with less sugar (around 200 gms for 5 litres did me fine) and some boring old bread yeast and see what happens... The bread yeast cant handle the high alcohol levels so you get a slightly sweeter but not so alcoholic brew. You just have to make / drink more if it to get smashed...

you nsure your yeast can cope with the higher sugar levels? it sounds like its gone orff - but then again I'd just leave it for a while and see what happens. What temperature are you fermenting at?

i've successfully fermented 1.6kg of sugar in 5litres with this yeast. im fermenting at 18 degrees (in my living room)

should be ok - thos ehigh levels of sugar will help kill off nasties. What juice did you use?

i used plain apple juice. the reason im worried is that it smells just like the other TC did when they went sour.

I think you're using to much suger, try using demera, and only150 grams, I leave it for 3 weeks, as I'm not to keen on fizzy, I don't prime, just sounds like with that amount of sugar, you making it dry to the point of being tart, and that's why it tastes sour, but good luck with it Ken, nice to see you here on the forum!

How long are you leaving it to ferment for? And how long til you drink? Mine smell rank while they're fermenting, but after around 2-3 weeks the smell improves a helluva lot.ken wrote:i used plain apple juice. the reason im worried is that it smells just like the other TC did when they went sour.

this is the first time i added that much sugar, i usually dont add any and it still ends up sour. does anyone know why that is?
the aj already had 16 grams of sugar per 100ml, if i added 1kg how much alcohol will be in it when its done? i gonna leave it until it is done fermenting and cleared up a bit.

I can echo the comments on the sugar.
I use about 100-200 grams in a demijohn.

it's been fermenting for about 6 weeks now (i think), and still looks as cloudy as at the beginning. it doesn't taste like cider at all somehow but it also doesn't have that sour taste.
