Are you talking abot wine made from jam?
I think with the stuff in jam other than fruit you would be better off just finding the type of fruit you like and making a puree or juice out of it and fermenting that.
I'm just here for the beer.

get three 500grm jars of whatever fruit jam you prefare. add the juice of a lemon and a cup of tea and add your yeast. its that easy. only fill it 3/4 full. once everything falls out and stops fermenting rack it off and top up with water. i have two of these on the go at the moment. they are quick, cheap and tasty!

Add some pectinase to break the pectin in the jam down.

Oh and make sure the jam is fruit, sugar, pectin and vit C only. Hartley's best make some nice jams for this. I recommend the blueberry. Especially how clean it comes out the jam jar!

Fatcontroller, this is for a gallon of wine, more or less. Just use a demijohn and leave some space in it for early fermentation, then top up with water to the bottom of the neck later on (like after racking). The volume of a demijohn varies quite a bit, but most of mine are in the ballpark of 4.75 litres to the neck.
