Real Old fashioned Mead Recipe idea's

Hi,

As mentioned on another thread I have managed to acquire over 5kgs of framed honey which is a melange of Honey, pollen and wax from a local bee keeper. It was cut from the bee hive frames into a clean 10 Litre FV and now I have to decide what to do with it. It should go to making a real old style Mead where it seems everything when in the pot with water and the wild yeasts were used to ferment the mead. The only thing missing is the bee venom. This stuff according to the bee keeper has already started to ferment so I guess I need to act quick. I will get a picture record for the brew as in my mind this is a rather novel opportunity I have been given. But before I decide on a recipe to follow I thought I would post up the initial situation and encourage ideas or advice on how to proceed from my fellow brewers.

Good luck with your experiment.

If it was me, I'd kill the wild yeast and use a proper mead yeast. Just my preference

yeah id kill everything a start with something you can control, or at least trust. (and by that i mean the mead, not the government...)
