Turbo Cider (Sorry)

Post by Hoppkins » Fri Dec 29, 2006 2:37 pm

Hi guys,

I know there is an 'extensive' thread on turbo cider. I went out and got myself a nice demi john and some airlocks today so i can give this a try.

I flicked through the TC thread it seems a fair few "final" recipes were determined. Could anyone post theirs below please?

As i understand so far you need a load of apple juice (not sure how an average demi john holds...it doesnt say) sugar/honey/<insert x sweetner here> and some yeast. I got regular ale yeast. Is this a mistake?

I estimated how much capacity my demijohn has with a watering can. Seems to fill it to the domed part near the top at about 4 liters. Sounds about right?

How full should the container be filled so that the frothy head doesn't come spurting out like a volcano?

Thanks

Most small demijohns are around 5litres, 8 pints, or 1 gallon.

Never had a problem with frothing at all and I ferment at around 22c. Used a youngs cider yeast so far, hydrated in water first. Must contain an anti-foaming agent

Recipes tried so far.

1) 4l apple juice, 1l blueberry juice, OG1048

2) 5l apple juice, 250g brewers sugar, OG1060

3) 5l apple juice, 300g blossom honey, OG1068 (in primary)

FG's end up around 1000 or just below.

Rather dry. May add artificial sweetener to current one when ready for bottling.

I leave in primary until very clear and then add 1 level tablespoon sugar to each pint bottle.

Most people partly fill the demijohn until the first rush of fermentation is over, then top it up with more juice.

It can get quite lively, as I found out to my cost!

I used wine yeast, but plenty of people have used ale yeast with no problems.

1 sachet of yeast is enough for gallons. Im guessing not to add the whole sachet?

Great stuff thanks guys :)

I'm guessing keeping as warm as poss is good. I have an airing cupboard which will be a good 20 degrees plus.

Airing cupboard is too warm - just stick it in a room which is heated by a radiator.

Problem with that is the room which i brew in can go as low as 15-16 degrees at night and i cant afford to have the heating all the time.

Maybe wrapping a load of towels around will help.

Thanks for the tip though, would hate to find my hot water tank covered in bad smelling gunk.

Are there any good plastic bottles you can use to store this stuff?

I always keg my beer and dont fancy spending on a bottle capper.

I have found the strain of dried yeast I used to be quite good at keeping once opened. I have used the same packet for all 3 of my TC brews :)

If you pour the juice in through a funnel from high up it tends to airate itself quite a lot on its own, but its still worth shaking if you can be bothered.

Could try using empty lemonade/coke bottles, but I've always had a topper.

Great stuff, any idea how long the cider will keep in the plastic bottles?

Gravity down to 1.030 from 1.060. Half way it seems. When its done which would appear to be another day or 2 would it be best to stick it into bottles to condition?
