Tonight saw my most experimental couple of brews yet...

4 litres of el cheapo apple juice
0.5l of strong tea
2 cinnamon sticks
Half a 'Handful' of crushed cloves
5 scotch bonnet chillis
Mounded spoonful of ginger powder
All campdened before...
T58 yeast slurry
DJ2
4.5 litres of the same apple juice
1 tin of pears
Crushed cherrys off garden tree (type unknown)
Rind of 3 lemons (the missus using them for cooking)
S04 - half pack
Absolutely no idea how they'll turn out.

You may well laugh, but I've just been to a Brew Fest here in Denver and there was chilli beer there. A bit like eating a kebab and drinking beer at the same time...so that saves on calories, right?

The one I tried was "Billy's Chilies" but as you can see it isn't unusual to put such things in beer over here.

i did something similar
i used 4 fruit t bags
blackcurrent bursters
made as a cup of tea then dowsed in the pot whilst melting the honey into the juice
going to bottle and prime with 1/2 tsp of dem sugar
after clearing into dj,s twice
the green stuff tasted like jaques
just see if i can put a bit of fizz in it with the dem sugar

You just have remember that the capsaicin in the chillies is a "fatty alkaloid" and is dissolved by the alcohol - though whether the chilli brew will have enough alcohol in it to dissolve the capsaicin is another matter.
If you want a chilli extract to add to a brew though, just mince the chillies in a food processor (trim the green tops off first) and then soak the rest of it in vodka - it works, very well.........
I know that, because that's how I extracted the capsaicin from last years chilli crop and made it into sauce about 2 weeks ago - it's very hot, very very hot.......
