Conditon/Bottling a TC

Hi,

To complement my foray into kit brewing, I have started my first TC. At present it is fermenting away in a 5L plastic water bottle, and has been for almost a week.

I used 3L apple juice (topped up to 4.5L), ~100g muscavado brown sugar, couple of teaspoons honey, 1/2 cup of black tea, lemon juice, cider yeast, and randomly a couple of dollops of bramley apple sauce (found unopened jar in cupboard).

When it has stopped fermenting, my plan was to bottle in primed 500ml bottles. However, should I be racking it off to another large 5L bottle first? If so, for how long and should I add anything at this point? Would this affect later bottling and priming as I am aiming for fizzy cider?

At present I only have a couple of 5L water bottles, so if I was to rack off, presumably I could not add more juice, and seal unless I hole the racking bottles too.
