Hello,

I currently have a TC fermenting and want to stop fermentation.

I was going to use campden tablets 3 1/2 as it is just under 15l. However this will kill carbination.
So if I rack off to barrel will that stop fermentation as it has been removed from the yeast.

Also I assume that adding campden will add a taste to the brew.

If the TC is still fermenting, racking to a barrel will not stop fermentation. There will be enough yeast in suspension to continue and it wll also carbonate in the barrel. This should only be done near to the end of fermentation so as not to over pressurise.

I assume you want to stop fermentation to leave some sweetness in the TC. The above will not help with that.

As for the campden, that will probably stop it as you require. I believe this is what is done with wine (someone will advise better for sure)....not sure about the taste.

If it is for sweetness, you are better fermenting out and adding saccharin, or as I prefer a splash of apple juice in the glass when you serve (makes a huge difference)

To stop it you'll need a combination of Campden and Potatassium sorbate, Campden alone won't do it and it will start up again after a while. The combination of the two will stabilise it however, you can then add fermentables again and it won't start up.

Thanks for the replies.

Regarding the ferment to dryness then sweeten I've tried before but could not acheive the taste that the brew has at the moment.

As I don't have any potatassium sorbate it looks like it will just be campden tablets and a cold shed.
