Ginger Beer-Ideas needed

Hi Everyone.
I've just started a ginger beer off and am going to add some different flavours into the bottles when the time comes. I've got enough to make up about 10 pint bottles. I'm quite partial to cinamon so was going to put some in 1 or 2 and I've heard a bit of chilli goes well with ginger beer so will try this too.
Has anyone got any ideas of anything else I could try :?: Maybe something a bit Christmassy?

By the way my recipe was:
160g fresh ginger
1 lemon
1kg golden granulated sugar
Muntons Premier Gold ale yeast
I got a big pan of water boiling and grated in the ginger(skin on). Added the lemon zest, juice and threw in the leftovers too. Then I dissolved the sugar in. Pour it into a DJ including the bits (less the lemon and a few big lumps of ginger). Topped up with water and cooled before adding the yeast.

The main problem most people had when brewing this was the beer being too thin. I would maybe go for using a kit and adding some ginger into the mix. Just a thought.

Coopers kit is great in my experience - adding blanched (to sterilise0 ginger, cinnamon and cloves would make it more xmassy i guess

Well so far so good. It's still bubbling away nicely and smells really good. I'll keep you posted on the outcome.

Just a quick update. The ginger beer is still fermenting, so much for a Christmas drink!!!!!

How did your ginger beer turn out? I've been casting about for a recipe to make one with, since we don;t have ginger beer kits available here in the US. What is the volume? ABV? Thanks!

I've only just bottled it this weekend so need to give it a bit of time to get fizzy. Tasting it out of the FV it was quite nice, with a good ginger kick. Going to try a bottle next week and will post the results here. Unfortunately I forgot to take a SG so can't work out the %. As it's taken nearly a month to ferment and it's been quite vigerous I'd assume it's going to be quite strong!

I've just had a taste of the homemade ginger beer and it's good :D
I wish I'd taken a SG :x It must have been really high as after 2 weeks it was still 1070+(I strained out all the bits at this point). I bottled at 1020 with no added priming sugars. I got a hiss when I popped the cap, but no fizz yet as it's not been in the cold long enough.

There's enough sugar still in it to give an initial sweet taste and a bit of a light syrupy body. Then you get a really nice ginger kick at the back of your mouth. Def going to be good when it gets a bit more fizz.

I'm going to make up another batch to the same recipe and bottle with a slightly higher FG, around 1030.

I have a feeling this is going to be a very popular drink come summertime, so I'm going to keep experiment in my 1gal DJ's until I get it right then go for a full 5gal in time for my first BBQ.
