how to get a sweeter cider
Hi guys,
well I have started tasting some of the TC's I've been making.
I have come to the conclusion that they are really too dry for my taste.
Although i can add a teaspoon of sugar to the glass I would prefer to be able to get the cider to be fully fermented and sparkling but slightly sweeter than it is ( bottled at 1000.
so I guess my options are:
A different yeast- i am using youngs super wine but am experimenting with bread yeast - any ideas on a what other yeast to try.
Adding some non fermentable suguar- what type should i use and when should i introduce it to the brew

You could try adding sodium met to kill of the fermentation but not sure of the sucess of this. Adding apple juice to taste would be a good alternative.

I use youngs wine sweetener, just add it before you prime and bottle, it depends on your taste how much you add, I add it little by little to the whole lot and keep tasting until it tastes sweet enough.

The wine sweetner sounds good as I presume that i can still pprime the bottles to get the fizz.

i have used splenda ,it doesnt seem to have any after taste and you can still prime..

lactose sugar, available from LHBS or any none fermentable sugar as in artificial sweetner sgould be OK.
I have also added with some fermentible sugar to prime I cant see why it wouldnt

Add some lemonade to your finsihed pint. Or stop being such a girl!!!

….but seriously, you can use youngs wine sweetener or, even better, master the art of keeving (look it up).

Why not make up a batch of stock syrup (500g sugar 1 pt water) boil to dissolve sugar, when cool store in a glass bottle in the fridge (keeps for months)
pour your cider then just add a slug to the glass as required to taste.
much better than canderel or any or those other artificial sweetners and each drinker can choose how sweet they want it

Can you keeve five alive?
I was looking at adding lactose to my cider, but have since read that a lot of unfermentable sugars aren't very sweet and some have no sweetness whatever. I thought that I wouldn't like a dry cider but made up a batch of TC because my beer brewing is knackering and I couldn't be bothered. I haven't looked back since. I now love TC almost as much as I love beer.

Has anybody on here done this? Sounds simple but unreliable. It is mentioned in the Breton Cider article on this site. Has anyone tasted cider sweetened through keeving?

I have not done it yet, however i intend to make quite a lot of cider this autumn, I have just bought myself a fruit press so when autumn comes I will be trying out lots of different cider making methods.Philipek wrote:Has anybody on here done this? keeved cider is the most natural way to have sweeter cider - its way better than any other method.
