Thinking of a black cherry cider

Post by Oddbod » Wed Dec 16, 2009 6:10 pm

The wife has asked me to make her a blackcherry cider, so was going to use some fresh frozen black cherrys, with about 5lts of tesco AJ, could anyone recommend how much cherrys I should use was gonna use about 500g of cherrys, would that be enough ? Also should I add any extra sugar ?

Sorry for all the questions only been brewing for about a month or so now.

Cheers
Simon

I wouldn't bother adding more sugar unless you want it very strong. It will be about 5% just with the juice

definitely put about 25% apple juice in with it - if you make it pure black cherry it will be extremely dry and sour (even if you use non-sour cherries). Also, it takes about 6 weeks to condition. A good idea to make it a bit sweeter is to sub some of the apple juice with a litre of five alive berry burst - it has non fermentable sugars in it. It does make a good drink, though.
