My best cider yet - Toffee Apple

Post by johnmac » Thu May 13, 2010 12:53 pm

I've tried brown sugar, grape juice, golden syrup, treacle and honey but this time I made toffee by boiling 1kg of sugar. Fermented this with 4 1/2 gall of Lidl apple juice. Next time I think I'll try caramel rather than toffee, see if it's even better.

To clarify, how much liquid did you boil and for how long with the sugar in it.
I like the idea of toffee apple tc

I used just enough to avoid burning - the water all evaporates at 100C anyway and you carry on to 155C, let it cool, break into chunks and chuck in the fermentor.

FG is about 1005, so it would appear that turning the sugar into toffee makes it a bit less fermentable. You can't really taste the toffee but it makes for a lovely full bodied cider that's not at all dry.
