elderflower champagne - which yeast?

elderflower champagne - which yeast?

Hi all, I'm going to try and make some of the above. The question is which yeast is best? I have a few ale yeasts including S04 and some cider yeast. Can also get some wine yeast easily from Wilkos. So it's one of the three - champagne yeast is not readily available to me and i can't be bothered to wait for an order. Was also thinking about scooping some active yeast out of a currently brewing Ambiorix. What does ye reckon?

I use Champagne yeast but wine yeast should be fine.

Ah, bugger. Wilko's has closed now - I'll have to wait 'til tomorrow.
