It's not a kit but its pretty easy:
(And quite popular on the AHB forums where I borrowed the recipe from.)

1.0 to 1.5kg Fresh Ginger (use a juicer or blender)
2.0kg Brown Sugar (I like dark brown sugar if you can get it)
1.0kg Honey
4 Cinnamon Sticks
5 Large Lemons (juice and rind)
5 Limes (juice and rind)
(Add 2-3 chopped chillis to primary if you want a nice hot kick).

Yeast US05
OG - 1057, FG - 1012

Wolfy, I was wondering if you had made this one.............does it turn out very dry. Do the cinnamon sticks go in whole and how long is the fermentation? Cheers

The best and simplest step by step guide I've found and its turned out pretty well each time I've made it.
I have even printed out these instructions and given them to friends who have had no brewing experience!

http://www.bbc.co.uk/dna/h2g2/A634664

I have experimented with different types of sugar but found that ordinary white sugar gives a much better taste than brown or caster.

It is very important to make this in plastic 2L bottles that can handle the pressure ie. Fizzy pop bottle not squash or water bottle otherwise the bottoms of the bottle will be pushed out and made round by the pressure making the bottles fall over and their lids will blow off! But don't let this scare you its all fun, just remember to release the gas (Co2) every so often and dont leave them to go on holiday like I did

I found this recipe to give you a warm rosey glow after one pint and it to be around 5% adding more sugar will make it stronger
but found messing too much makes it far too bitter!

Thats a good old fashioned Ginger beer plant. Traditionally up here in Newcastle, you handed the half on to a neighbour so they could start and everyone had one. I remember the bottles exploding in my mams airing cupboard on a regular basis and the end product nearly took the skin of the back of your throat! Happy days :)

@trucker5774 the original recipe is not mine, but the details and a 9 page thread of comments/feedback/adjustments can be found here: http://www.aussiehomebrewer.com/forum// ... opic=30492

@zz9pza, all good questions, again the thread I linked above has very detailed instructions that you might find useful.
The total boil size is 24L

WOW thank you that recipe looks very interesting!! If only I had some spare bottles!
I think I'd better get drinking tonight!

Do you have any idea if the honey used is solid or runny, I guess it doesnt matter that much but have never hurd of "Iron Bark Honey"

Just wondering what would happen if you made a tea bag of ginger, cinnamon, lemon etc and either add the juice from it once boiled or add the dry ingredients to an existing beer kit do you get a bitter with a ginger kick to it or am I being daft ?

I've just fermented a Youngs Harvest Yorkshire Bitter kit with 2 teaspoons ground ginger (all I had left in the jar) and a big lump (200G or so) of fresh root ginger. Got a lovely ginger aroma out of the fermenter and its now just waiting for me to get round to bottling it sometime this week. I'll be having a crafty taste soon :D

Runny/normal table-type honey.
Iron Bark is an Australian native tree, since it's a Eucalyptus tree the honey is likely to be fairly robust.
I'd suggest you use whatever the local favorite honey is over there, but not something to delicate.

I'm sure it would work to add a bit more interest to the kit-ingredients, you could also follow the example of the BIAB (Beer In A Bag) people and make a large 'hop sock' out of some Swiss Voile (curtain-type) material. :)

Had a crafty taste this weekend whilst barreling, must admit that I was hoping for more from it in terms of a ginger bite and refrshingness but it is early days. I'll try again in a months time.
