Quick help please: making cider, dont know what to do now!
I have some cider brewing, and I don't know what to do with it now !!! What I did was I got some apples out of the garden, these are eating apples, I maybe had 200 of them, then I just grated them, squashed them in my hands, and produced enough juice to fill one demijon!
So I put some Allinson Dried Active yeast into a cup added a little hot water, 4-5 spoons of white sugar, left that for 15 mins, and put that into the demijon. I added some pectolase too. Then I put the water trap on, and its been brewing for about 10 days now. At first not much was happening, but on day 3 it was bubbling about every 2 second! Now we are on about every 35 seconds, it was on every 16 yesterday at this time.
So what do I do now? I did a little test with some apple juice in a wine bottle, I did the same and it brewed in 7 days, when it stopped bubbling I added a crushed campden tablet and left it a day to clear, decanted it into another bottle and then drank it!
Should I be adding the campden tablet to the big lot today? Please help asap!
I really want to keep some of this in bottles for a while, this being my first brew i want it to mature a bit !!

get it bottled up and let it clear.... or just drink it!
Once its down to 1000 it wont be fermenting in your stomach long enough to give you wind or cramps if you drink it now, but you could let it go on until it gets to 996 for a full ferment to dry..... but I guess you really wont notice those points in alcohol or taste as its a TC.
The only time i'll use a tablet is if I want a sweet ending to the wine, but i'd also use some potassium sorbate too to really kill the yeast.
It should be cleared within a week, but why let that stop you

what i want it a flat cider, not sure on the taste as i dont know exactly what i want!
So if i leave it now as it is in the Dj, add a campden tablet, and come back to it in how long? Then bottle it that would make a good cider?
Why not wine bottles? I was planning to use some LOL!

Can i leave it where it is now for say a week? I have 4 DJ with stuff brewing in them atm. First is the cider, second is a kit, that s youngs brew country definitive Blackberry wine which im also worried about [ more about that in a sec] third is another kit with elderflower wine, fourth is red grape, and apple juice bought from super market.
The blackberry, i think that should be due in about a week, but im worried about it, in the distructions it said on day 3 add some tepid water, i thought this was just filtered water but no its warm water. Since adding the extra water, bubbling has gone from about once every 3-4 seconds to about once a minute. Have i killed the wine?
If so ill bin it off, clean the DJ out and put the cider in there. That has been brewing from the same time as the cider.
The other apple/red grape cider to be, when that ferments, i plan do drink that more or less with in a week or 2. I planned to put a campden tablet in it, then leave it a few days, then put it in wine bottles with the screw tops! What do i do with it now? I dont want an exposion!!

Got my home made cider finished, i put a campden tablet into it, and have left it for 2 days now. Last night i sampled a little bit
It was drinkable a little bitter..
Can i add sugar or honey to it now?
How much sugar should i have put in at the start of fermentation?
The other one is, i bought some apple, red grape, and cranberry juice, brewed that. Tried that last night and it tastes very bitter. Not drinkable really, although i did put about 300g of sugar in it at the start. I think this will get binned off.
Did i use the wrong juice, or did i not add enough sugar?
Next one i plan to do is apple juice and cinimon, what is best to add in it?

Thanks again for the reply mate! So the acidity, it felt like the cider had very small little bubbles in it, and it tasted sour, but you will be right it will be acidic. So this is because its a young cider so i should bottle it and leave it for a good period?
Should i add tea to every cider i make?
I did think at the time it had a hight alcahol content you can taste is cant you if you know what i mean. Ill bin that one off and start another one. Or should i bottle that, and over time will it be ok?
The other home made apples cider, that is setterling, can i bottle this into wine bottles now? Or will it ferment more?
