Rosehip wine yeast

For any alcoholic brew that doesn't fit into any of the above categories!

Rosehip wine yeast

I've picked just over a Kg of rosehips this afternoon. I've found a simple recipe

1kg Rosehips
1tsp Citric Acid or juice and zest of a large lemon
1kg Sugar or 1.5 kg for a medium wine
1 tsp Pectolase

but what yeast is the most suitable? I was thinking of sauternes!

CJJ Berry's First Steps in Winemaking recommends a 'general purpose wine yeast' for rosehip wine. He does recommend recognised strains where appropriate, so the fact he doesn't do so here could mean any old yeast will do.

Which is no help to you whatever, I admit! :lol:

Thanks for that Jim! I've got 4 gallon of blackberry in the fv with a burgundy yeast.

I might just rack it off and throw the rosehip must on half the yeast cake.

My mum always told me that rosehips were poisonous

I'll let you know in 12 months time. If I remember. My dad tells me it's quite dry, pale yellow and a bit like sherry.
We used to split the pods when we were kids and put them down the back of each others shirts. We called them itchycoos!! Idunno!

Thanks for the link. Interesting reading. I might save this brew for dinner with the in-laws. Anyone for a nightcap - glass of Hawthorn berry?

That article actually suggests they aren't. I've seen plenty of recipes for rosehip win, anyway. Probably the alcohol is more toxic than whatever residual substances might be in the hips. :wink:

i made it last year and it was a taste sensation. alittle tropical, almost orangey muscat going on. i highly recomend it, tho i didnt use the wee hard ones, i used the big fat ones (i dont know the different breeds of roses...). i go by one carrier bag to one kilo/gallon of sugar/water

yeah mate there the ones. ive a spot near me were there are tonnes of them growing. the city council seems to plant them all around here. use as much per kilo of sugar as possible. need to add pectolaise too and the usual lemon and tea.

also its a bit of a bollox to get them ready. i used the biggest pot i had and did it in barches. you need to boil and mash them so they release the seeds. the seeds float so then just scoop them out with a seive.
