pear drop flavour aroma in fermenting apple juice
was checking the fermentation progress of my cider last night and the juice has gone from 1048 to 1009 but i noticed a strange pear drop aroma and then tasted the same is this normal or am i on the road to cider vinegar ?

Sounds like ethyl ethanoate or as it used to be called ethyl acetate, this can occur when the cider is fermented at too high temperature's or if the cider is fermented on lot's of apple pulp for too long, or both. From what I have read there is no cure and the cider should be thrown away, don't quote me on that though it's only what I have read. On the plus side it isn't poisonous so it all depends whether it tastes OK to drink it or not.

aye it sounds like that as i think it was warm and there was quite a bit of pulp ! I have now transfered it to another bucket leaving some pulp etc behind and put it out in the shed where its cool was hoping i could ' blend' it with some fresh juice ? Any thoughts ?
