Ray Mears, is always drinking pineneedle tea on the telly...

Pine needles have very different properties depends on what verity your picking ....
I was totaly put off the idea when I read this website (last question)
http://www.vin.com/mainpub/xmas/

If you're not put off by "Pine needles do have a compound, isocupressic acid, that can cause abortions in cattle, but I am unaware of any problems in pregnant small animals or other monogastrics"
then
"You're pine needles should be fresh and alive. You will get more flavor and nutrients if the needles are fresh"

How about a braggot heavily hopped with one of those piney hops?
I'm just here for the beer.

The Greeks add pine resin to wine to make Retsina and in some places they mature wines in pine barrels to get a similar resinous flavour. So if you're a fan of Retsina (I quite like it occasionally, but I think it's a bit of an acquired taste) then pine needles might be just the thing.
