I ran out of commercial cider tonight while the brews are busy so I just thought I`d get the creature out of the ivy cottage out (The shed with a tree growing on the roof - I`ll post a pic).

It`s el cheapo white rice, sultanas and a bit of honey `wine` and it`s a bit cloudy but god it`s rocket fuel.A friend`s refractometer says over 20% which is not bad for my first ever wine.

There is very little residual sweetness left - I wouldn`t even call it a medium f**k u* now but it`s a bit rough like iffy saki !

At the moment it`s one of those drinks where you have to be drunk to drink it; but time will tell and it`s still young.The buzz is mega but the taste is not the best; it must have been the year old honey, deadski orange and lemons, normal sugar and value sultanas and cheapy rice.I suppose GIGO applies - Garbage In - Garbage Out!

I used liquid champagne yeast (from a brewery) plus dried strains which are both high attenuation (75%+) and flocculation yeasts together with nutrients.I started the mess hot for two days (75-80 then reduced to late 60`s.) I must just be lucky like a novice on a golf course hitting a fluke.

Before I get offski for Chrimbo I want to do another sicky-saki but hopefully something more palatable for normal people!

Has anybody else had any good results with tasty alcofrolic unconventional homebrew wine and please can you offer tips on clearing and making it smooth-ish? Thanks in advance.

It wasn`t really a recipe avtovaz - it was just what was in the cupboard at the time.

From memory I think it went somat like this for a 2 gallon wine brew :

2 kg cheap white rice
2 kg cheapy sultanas
half a jar of some ancient honey
about four old oranges and about two lemons - squeezed - just the juice
2 kg of sugar
2 teaspoons of youngs dried wine yeast

Nothing was boiled and after about two weeks it was floorcleaner; after two months it was that bad that less than a pint got you wrecked for twelve hours solid.It gets through hours like a BMW M6 munches motorway miles.Next time I do it though I`m gonna use better quality ingredients.

Oh and the Egyptian special brew is getting on nicely; I just drew off a pint to try last night and I was nearly walking like an Egyptian!
The orangeade effort is fizzy as f**k and that`s not ready yet but it smells scrumptious - it`s only a baby.

The scrumpy has been rechristened mañana because you can`t do jack s**t `til the next day if you`re on it.Things sort have to be postponed because it`s a naughty little number.
