I started thinking of my next brew as my first brew, Ginerbeer is neigh on ready to bottle. As with most of us the better half wanted me to make her a drink and as i'm not ready to do a full mash ale yet i started to look. i found a few recipes in carribean recipe books for lime washes and punches. i already make a non alco punch shown to me by an old skool ratsa which could easily be brewed up (rum dont taste right in punch - sorry Mona!) i came across a thrifty recipe that uses the pineapple core and skin along with ginger and lime to make a refreshing "wash".
My idea was to follow the recipe but use the juice from the pineapple as well(got a juice extractor), after boiling up the core, skin and ginger.
here's the recipe
3 pinapple
250g root ginger
1kg sugar
juice and zest of lime
juice and zest of lemon
champagne yeast
method
add 4.5l of water to pan along with the pinapple core and skin, the chopped root ginger, lime and lemon zest along with the sugar. bring to boil and simmer for an hour.
strain brew the add pineapple, lemon and lime juice and cook for further 5 mins. allow to cool
read gravity and adjust to desired reading
pitch yeast.
i was also tempted to do this as a wine - me granda used to make some different wines along with the usual elderflower and peach wines, they used to taste great when i was a kid and one glass would have me spinning!
give us your thoughts and some winemaking tips would be really helpful too

well i was thinking about my recipe last night and looking through alot of tc and other brew threads. i have come up with a revision as i may need to leave this in bottles for a month or 2 as the mrs aint a big drinker anymore.
so i boil up 3.5l of water with the pineapple core and skin, ginger, lime and lemon zest and juice and the sugar.
freeze the juice extracted from the pineapples as it wont keep long enough.
adust gravity of cooled brew to 1050, pitch yeast and ferment down to 1010.
defrost and boilup pineapple juice - add cooled juice to DJ and add brew from other fv. allow to ferment for a day or 2 then bottle, allow to carbonate then chill.
so basically a TC but using all natural ingredients and basically making my own concentrate and topping up with fresh juice - sound like a plan?
