A quick and easy Mead, any ideas please?

I wouldn't bother with the egg white. Whilst nothing wrong with it in principle there are more effective fining agents available cheaply from LHBS which you can elect to use if you feel the need.

Also, adding egg white means that boiling is required. If you use supermarket (i.e. pasteurised) honey then this does not need boiling. Boiling also drives off even more of the delicate aroma and flavour compounds that pasteurisation will have (mostly) got rid of...

Yeast nutrient
1 lemon
1 gallon water
