I believe that if you make alcohol free beer (or low alcohol beer) then you need to heat beer so that all the alcohol evaporates. Maybe read the bottom of this wiki page http://en.wikipedia.org/wiki/Alcohol_free_beer
To make gluten free and alcohol free beer home brew styles I would do the following:
Make beer the gluten free way. Here is a link i found in google viewtopic.php?p=71805&highlight=
When it is ready to bottle put into a stock pot and heat to 80c for about 1 hr with the lid off. It might take a bit longer to evaoprate all the alcohol so maybe someone else could advise on this.
Cool beer and then make a yeast starter. Prime beer with sugar, add yeast starter and then bottle or keg. (you will kill the yeast by heating it up to 80c and the yeast is needed to put bubbles back in your beer when you bottle)
You wont get exactly alcohol free beer, but you will get very low around .5-1% alcohol beer this way.

Hmm, I was wondering about low alcohol beer myself. Probably not low as in .5% but 3%ish. I still want beer to taste good and I still want highly malted beers with lot of flavour. The trouble with brewing at home is that it is easy to drink too much and a lower alcohol content allows you to drink a little more with less workload on the liver. Many of my preferred beers have a high alcohol content - just planning an OP this weekend for example.
