This kit is a cabernet sauvignon.On the instructions it says that after clearing transfer to another Fv to add sugar for required sweetness.It gives amounts for piersporter,blush,chardonnay etc but not this one.Surely after adding 4kg of sugar at the start it won't need any more,as this wine is not meant to be sweet?
Can I just wait for the clearing to happen and then bottle,rather than messing about with transferring to another Fv?

I would just let it clear and taste it, if it's to your taste bottle if not you could sweeten then.

It's always best to rack wine. Our first wine kit was a Solomon Grundy elderberry and it has to be said, the instructions were crap. Because it was part of a starter kit, the FV was an opaque bucket. We didn't rack it and I took a large mouthful of the last half glass of the last bottle and ended up with a mouthful of lees. Which was not pleasant.
