Vimto TC/Wine queery
Vimto TC/Wine queery
I currently have 2 dj's bubbling away, one with just vimto, sugar and water and the other with vimto and aj, started on the 6th of this month the one with aj started well but the one with vimto and water started poor and required a second dose of yeasties.
But 19 nights on both are still bubbling away at a good rate where as in my experience so far most brews are usually by in like 6 to 14 so can anyone tell me is this OK or is there something else going on in there? :/

Re: Vimto TC/Wine queery
Cordials like Vimto contain presevatives (sulphites) which stop the product from fermenting. You need to gently simmer cordials for about 20 minutes to try and kill off the sulphites to allow for the brew to have a successful ferment.
The colder weather will be making for the longer fermentation time, just allow them to do their thing and get down to FG of 1.000.
They will be a sweet wine due to the artificial sweetners used in the Vimto and will taste very fruity but not Vimto flavoured.

I've just done a red grape juice with blackcurrant high juice. Even with boiling the juice it fermented for what seemed like months.
Just be patient....

Re: Vimto TC/Wine queery
Cheers guys, the 2l of vimto was boiled off for twenty minutes and divided x2 dj's
1st was 1lt vimto, 1lb sugar topped with water, I had problems getting this one started but making a new starter got it away and is still bubbling at a fair rate right now.
2nd was 1lt vimto and 1lt apple juice 1/2lb sugar, with Young's High alcohol yeast, this one started fine and is now FINALLY
slowing down.
The yeast used in the first was originally the young's high alcohol but failed to start, new starter was with Gervin gv1

Re: Vimto TC/Wine queery
Well folks the Vimto and aj did finally finish and was bottled last week, I am however BEFUDDLED
by the Vimto one its still bubbling yet at around every 10-12 secs now it was only 1.075 og so with a ferment temp of 20-23 I would have thought it would have finished a while ago, any tips guy's I was gonna draw a sample but not sure what to do?

Re: Vimto TC/Wine queery
Gently place your (sanitised) hydro into the fv and find out. if it's >1.000 then just be patient. I've had a mead that took 46 days before I stopped it at 1020. I've heard of ferments that have taken over a year! As long as that SG keeps dropping slowly but surely you'll be fine. If it gets constant over a week and it hasn't dropped to 1000 , then you've maybe got a bit of a stuck ferment but that can be remedied.
