sugar and blueberrys a good pair?

Hi all,

new to this home brewing stuff, started my first ever batch last night. 16 hrs into it now

just wondering if anyone has tried something similar and if so what was the result?

young's super wine yeast compound 60g (rehydrated sterile water, nuits and kept airated and warm for 3hrs)
5Kg sugar
7g citric acid (young's)
2 tsp pectolaise (young's)
3 tsp nuitrients (young's)
1Kg defrosted strained/smooshed blueberrys (very messy job)

all boiled off (not the rehydrated yeast and nuits ) and skimmed junk of prior to transfering to main fermenter, making 15Litres in total.

all fermenting niceley however one concern is there is no scum/foam not sure if thats a good or bad thing, still the airlock is bubbling away at about 40 blubbs per min tho :)

the starting SG was 1.115, high yes but the idea is to have a product with a high abv end and a blueberry hint, so the misses can dilute to her taste.

comments/suggestions welcome

You'll be looking at a extra long ferment... like maybe 3 weeks
and I use youngs wine yeast alot and found it struggles to ferment out more than 1kg of sugar per 5L water
I think you are going to find urself waiting around for long time only to find the drink far to syropy outcome.

If you add 900g of sugar to 5L water atfter about a week you'll have something crystal clear about 10% that you can mix with blueberry juice or something...

lol no it is eventually going to be diluted down, have flavouring and colour to add hoping the thing restarts to add some carbonation after bottling have blueberry essence and a nice hue of blue from tesco, the plan is to have something similar to blue wkd lol.

3 weeks is cool, if its going to end up syrupy thats not so bad its going to be diluted, if i do it now would it affect its fermentation time tho?

UPDATE: Gravity is down to 1.102, 42 hours from start... aaaaaaand just over a week into it an its still going strong, down to 1.065, still tastes mega sweet kinda like bubble gum lol
