I've always used Beaverdale wine kits in the past, but with money being tight I've been experimenting with using fruit juices and have finally got a descent white wine recipe that's giving me a pinot type wine consistantly. However my stock of red wine is getting low and I was wondering if anyone's got a recipe for a full bodied red wine?
Thanks in advance

Re: Red Wine help required
I'm only posting so as I can keep an eye on this thread, this is something I would really like to be able to do.
Any chance of posting (a link or whatever) your white recipe King.
My beer is good but herself still has to hit the supermarket for the ever more expensive wine.
My attempts are 'ok'ish by my standards, but she expects more and I cant really blame her

Full bodied red from juices/ fruit is difficult if near impossible from what I can gather. I'm still trying though! Of course the problem at the moment is none of the fruit is in season so that only really leaves supermarket shelves/ freezers...
In fruit terms the nearest approximation I have found is 2lb of elderberry and 2lb blackberry in a gallon of wine but I can't vouch for it as I haven't tried it. No damn elderberries near me!!!
Sloes would be a good addition to this recipe too.
On the supermarket side I am trying different juices and topping up with Ribena in an attempt to beef up the fruit content/ body of a wine but none of it is ready yet so it's all still theory.
Look out for PEK bilberries in jars (not found them yet!), blackcurrants, blackberries etc on offer if you can find them and fruit juices with these darker fruits in. Maybe try adding dried elderberries too but not done that myself yet. Sultanas are really good for adding body as as is grape concentrate.
Just off the top of my head - Maybe a Youngs cheapo kit from wilkinsons (cab sav?), a bundle of sultanas and maybe a bit of wine tannin? Perhaps some extra red grape juice but be careful of the acidity. A total guess but I think unless someone pops along with some recipes (that you can do now!) then this is down to web searching and experimentation...

Full bodied reds, nope just cant be done, been trying for a few years now and not having much luck. White wine, not a problem but red's even kits i'm not too happy with.

Maybe we should just content ourselves with home made wine being different, rather than trying to emulate something else. I made some blueberry wine a month or two ago, and satisfied myself that it tasted of blueberry. I like blueberries. It is what it is, why worry about trying to turn it into something it doesn't want to be.
