I've just knocked up another couple of TC's.
One of them was using a tin of strawberries, 2 tins of pears (both in syrup) and 100g of honey. Then topped up with 3 ltr of AJ.
It's been bubbling now for a week and I want to rack it off to another DJ to remove some of the crap.
Basically I've never used campden tablets but I was wondering if the TC would benefit from this.
Any advice re how many to add etc would be much appreciated.
Also, will this stop secondary fermentation, because generally when I rack it off I add more AJ and it bubbles again but I'm not sure if this would be affected by adding campden tablets.

I only ever use campdem tablets on fresh fruit to kill off any wild yeasts, or just before bottling to give a wine extra shelf life.

It will slow or stop secondary fermentation so if you want your TC sparkling leave out the campden, if you like it still 1 tab per gallon will do the job.

I think i might bang a campden tab in both TC's as I like mine still anyway.
I am interested in your comment about stopping fermentation though as I thought the only way to do this was that keeving thing which seems like way to much hassle. Does that mean that by adding a campden I can halt fermentation to retain some of the honeys sweetness?
I'll let you know how it goes anyway.

You can stop fermentation temporally with campden tabs but it will eventually start up again, if you want to stop fermentation at a particular time for sweetness etc you can use potassium sorbate.redskinweasel wrote:Thanks for your speedy replies.
