A little experiment I have just started.
300 gms sugar
2 inches fresh root ginger, finely chopped
4ltrs tesco apple juice
Boiled 1pt of water and added sugar and ginger. Stirred until sugar had disolved, let to steep for 1/2 hour.
Left sugar and ginger solution to cool then added to the DJ with 3ltrs AJ.
SG 1.064.
Will add another ltr of AJ once initial ferment has slowed a bit.
Should end up around 7%, if I let it go to 1.10.
Should be a nice drink, as the sample was appley(?) with a slight kick from the ginger.

Sounds interesting indeed, When you leave to steep, Were you simmering it or just gas off?

I let it simmer gently, maybe I should have strained the ginger, but I want a fairly strong ginger taste.

UPDATE: This actually went down 1.000 on my hydro' giving me 8.5%. I primed 2ltr pet's with 4tsp sugar so this could be very interesting.
Right now it seems a bit thin and lacking any real body, hopefully once conditioned and fizzy it should be a nice drink. The fiery kick has subsided somewhat but overall not a bad effort.
Would adding some raisins next time give it a bit more mouth? Or maybe even some spraymalt?

hey i did a similar thing a while back
apple,ginger and raisin TC
came out very strong and quite sharp
unfortunately all of the ginger taste disappeared (and i used more than you did)
my advice would be maybe try some 'dry hopping' with ginger and see if that works
