Killing Yeast

I have just done a cider kit - which I have stopped fermenting to make it a bit more medium dry rather than dry dry.. All seemed fine, racked it into a secondary with 2tsp of sorbate and 4 campden tabs (20L) - then after a few days, into a polypin with some apple juice for more depth and some sugar...with 2stp of sorbate and 4 campden tabs - just to be sure!!!!

Anyway - there is now a gas bubble appearing at the top of the polypin. Is this gases being liberated by all these chemicals, or is my yeast coming back to life?? i didnt degas it, so maybe its just residual gases leaving the brew..

My current plan is to leave it and watch and wait, but if it starts to balloon out, what can i do?? Im tempted to chuck even more sorbate and campden in... which i suspect wont work if its not worked so far.. (which i dont know yet.. if you get me.. :=P )

I have never used the sorbate, but my understanding is that it is made for what you are doing. The campden doesn't kill the yeast but is used by wine makers when degassing as a preservative.
