New Experiment, almost exactly the same as the raspberryade recipie... alledgedly has no preservatives and is relativly cheap in the local polish shop ,£1.60, the missus likes kiwi so i thought i would give it a go.


420 mils syrup.. has already got 340g sugar in it
300g white sugar
1 tsp youngs super duper wine yeast
1 tsp youngs yeast nutrients

all cooked up and chilled back to room temp, pitched yeast starter and topped up to the 5 litres, sg at 19deg C was 1.050

My brain wont even allow me to think what the kiwi juice drink taste like let alone how a fizzzy alcoholic version will turn out!
Im so jelous I've been looking out for this stuff everywhere, good luck and I eagerly wait ur verdict!

I think the colour of this is going to be amazing if it clears as well as the raspberryade!
You should bottle it in clear bottles and lable it with a skull and crossbones and the final percent :D

lol its not doing anything yet, ive had some take their time start before but this ones taking the piss lol 9 hours and nout... maybe theres something in it hindering things

going to get some fresh yeasy make another starter see if that brings it to life maybe a tsp full of 4 mnth old yeasties just cant cut the mustard lol

u recon its too late to pull it out the dj.. boil it off cool it and fire it back in? would the preservatives or whatever is in it be killed off.. and what would happen to the yeasties(besides die will they float about an ruin it).. would it still clear.. oh noes lol it definetly has something in it as i have a nice warm starter using some of the stuff outa the dj and its struggling and thats with fresh yeast, nutrients and some more sugar

It's probably just the lag phase. You certainly wouldn't heat/boil anything with kiwi fruit flavour. Heating kiwi's like that does the same thing as when you heat/cook apples i.e. you get a "cooked" taste that's just not as nice.

It might be difficult to achieve anything like an alcoholic kiwi fruit though, because half of the taste of them is the mix of sugars and acids - it's easy to lose one or both.

Good luck with your efforts though, it sounds like a nice idea........

i dont know if it was lag or not but i decided fook it over 24hrs and not a bubble that i could see... dumped the whole dj less the stuff at the bottom, simmered for 25 mins.. flash cooled in the bath(still in the pot), put it back in the dj at bout 21 degrees.. sg still @ about 1.050, threw in the stuff i tried to make another re-starter with some of the kiwi wash and a bit more sugar 1tsp and 6grams more fresh yeast (mentioned earlier) that was about 3 hours ago... ITS ALIVE!!, and as for the cooking effect, i never noticed any change in aroma or taste from the initial.

the ingredients for the stuff are:
Herbapol. Kiwi. Syrup
Bestell-Nr.: 20091205
Use / Indications: Syrup for all who like citrus fruits - the original taste and aroma of kiwi, perfectly refreshing and energizing. Perfect for the preparation of beverages, as well as to sweeten tea instead of sugar. Valuable addition to desserts and cocktails. The syrup contains no preservatives. Pasteurized. Ingredients: concentrated kiwi juice, kiwi fruit emulsion<--- eh?, sugar and / or glucose-fructose syrup, water, citric acid, aroma Package<---another eh? content: 420 ml

I boiling it is better than pouring it down the drain!
Im glad it started... see you experimented and found out
A)This Stuff needs boiling
B)Boiling acutally does help get rid of the preservatives!

My girlfriend makes a lovely apple and kiwi sauce for duck ... so I wouldnt worry too much about the cooking effect on the kiwis flavour.... ((humm maybe a apple and kiwi TC :D))

Well you'll find out soon enough! Roll on bottling day!

Well, its going very well now it looks like its going to be a verly light lime/clear u can see the whole cake/stuff almost at the bottom of the dj with all the little pits in it releasing the gas, its kinda hypnotic looking at it lol when the raspberryade is clear am going to be doing the dextrose wash + diet cola mix ive spotted in another forum no prizes for who posted it lol considering on using a turbo yeast and pushing it to the max tho :)

Well, I'd guess that the "cooked" taste thing is just to do with using the actual fruit then. I enjoy fresh kiwi fruit, but when I "steam extracted" them, the resulting juice wasn't that good i.e. it had lost all it's "fresh" taste and was like tasting cooked, but unsweetened apple sauce.

Good on yer for getting it going though. It does sound like the boil you gave it, dispersed some sort of preservative, because I can't think of any real reason why it wouldn't of started to ferment without any. The boil thing, as I understand it, shifts stuff like "sodium benzoate" and similar.....

Either way, you got it up and running...

Its down to 1.030, a little lighter and tastes awsome still smells like kiwi also (probably as thats added to the syrop and not all from the fruit thats only 35%) lol dont think i will be letting this go to dryness.. will be bottling at 1.010 / 1.005, needs to go to tesco and get some pet bottles cant be bothered bottle scrubbing, 17p per 2L bottle good times :D

Oooo.. we is @ 1.018 it certainly fermenting out pretty quick, will be racking off and bottling @ < 1.010 so its suuuuper fizzy lookes like it looks like ginger beer atm lol
