how can i make this>?

Sometimes on a saturday ngiht i goto tesco and buy some cheep bubbly wine, not real champaigne, but something like.

From what i gather, lots of bubbles, something of a low viscosity, and about 12 %


I will try to make this from juices, or anything i can get from asda, anyone got any ideas of a starter point?

2 litres of white grape juice
A handfull of chopped raisins
juice of 1 fresh squeezed lemon
1 kilo of sugar
1 tsp of tannin
1 tsp of citric acid
a good champagne yeast

Ferment to dry.

Getting it fizzy is the tought bit.
sweeten with non fermenting sugars like lactose or saccarin.
add 10g of sugar per 750ml bottle, cork n cage and store neck down.
Once secodnary is done, place bottles in a chest freezer full of crushed ice and freeze the necks.
Open bottle once neck is froze, remove sediment by scraping it off, re-cork and cage and store bottles as normal.

Why is it important to get teh sediemnt out of it?

As you want a highly carbonated wine, like bubbly, then you also want it sediment free otherwise the co2 will lift the sediment and make your wine cloudy as soon as you open the bottle.

You could also cheat like I do.
I put 750ml of still wine in to a SodaStream bottle, fizz the hell out of it, then bottle it. This works really well.

ah i see.. I dont have a soda streem.


One thing i do have though, and im going to atach ti to my barrel, i have a small welding bottle of C02 [ dotn think argashield will do! ] a bulkhead conector, a tap, and 4mm air pipe. Plan was to presurise the barrel with that, i wonder if there is something i can do along those lines with this..
