Pottasium sorbate and TC

I have a 20L batch of TC on the go, using the wyeast 3068 strain which is not very flocculant. I don't want this TC to be bone dry (which it probably will be if left to its own devices), as im making this to swmbo tastes (slightly sweet).

I was planning on getting some pottasium sorbate to stop the yeasties at the desired sweetness and use this in conjunction with campden tablets (prevents some unwanted reaction with leftover sorbate apparently). This TC will be going into a corny for gassing up so no worrys about natural carbonation.

Has anyone else done this with their TC?? How well does it work?? Is there anything im missing??
Also will potassium sorbate cause problems with the non-flocullant yeast, ie will it cause them to autolyse and spoil the cider or will it be fine???

There shouldn't be a problem with what you intend to do :)
The only other thing that I might do is to use finings to ensure that the TC is crystal clear before putting it into the corny. That way you can guarantee no yeast autolysis :D

I suppose throwing in some finings wouldn't do any harm, thanks for the advice TS :D
