A ginger plant isn't actually ginger, it's a mix of yeast and bacteria. I suspect that your recipe called for yeast. If so, a little bit before it gets to a sweetness you like, put it into plastic pop bottles, leaving as much of the sediment behind as possible, and tighten the caps up. After 2-3 days, it should be fizzy. Depending on the yeast you used and the amount of sugar added, the sugars will eventually get eaten and it will become bitter. Every day after that, give the caps a quick unscrew to let some of the gas out. Otherwise you could end up with a ginger beer fountain when you open it to drink it. Proper ginger beer will generally be cloudy.
