Fruit juices to go Turbo with?

Post by Baltic Regions » Fri Jun 08, 2007 4:04 pm

Been 14 years since I did any brewing and I'm for starting off some Turbo Juice (Want to try some different ones).

I have two questions  :

1: Why 100% fruit juice and not a lesser concentration?

2: What types of fruit juices can be / have been used?

Whne I did this before, there was no help "On-line". In fact I didn't have an "On-line" to work with!

Reading through the pages has been great.

Thanks for your help.

1 You can use juice that is not 100% concentrate but it will be weaker.

2 All sorts of juices have been used to go with Apple juice.I have used Cranberry juice,Pineapple juice(that is really nice),exotic juice(that is still in the demi-john but smells a bit...funny).
I would avoid orange juice as there was a previous post about somebody making it with OJ and we havnt heard from them since

Making TC's is all about trial and error, you can put spices in them, and different types of sugars and honeys can all be used.

Let us know how you get on with them.

I think the whole idea is to play with what you can find!

However a few tips

Avoid anything with pulp in it.
Asda smart price honey is 99p for 500g (good for a 1 gal tc batch)
Youngs wine compound clears quickly and is cheap as owt. (use 1tsp per gal)

Just have a play around with what you can find, just make sure it's not got preservatives in it.

Will definitley use the 100%. Would you use the apple juice as a base or is it really just a case of anything goes, (except orange juice) ?

just my 2 cents...I tried cherry and it wasn't great. Cheap apple was the best. Grape was nice too, actually. (white grape)

With doing 1 gallon batch sizes of TC's you can do what you want(within reason.....see PoP  )and if it is undrinkable then you havnt lost much.
I found that 3lts of AJ, 1ltr of pineapple juice and a small jar of clear honey(240g jar i think) was really nice so i scaled it up to a 16ltr batch and it has been sat in a keg in the garage for the last 2 months(a pint of that every now and again or so and is really clear(pineapple and honey dont clear very well)and tastes just like a good dry scrumpy....try it  i used safale-04 and it fermented down well(1.001).
Also it is "interesting" to watch this TC as it ferments because it seems to erupt like little curdled yeast volcanos 8) )

Right. Somewhere there is a scientist in me. I'm going to get the brewing started tomorrow and make notes on SG and mixes for the batches I set up. I will take photo's of these batches and keep a regular tab on their process. I will also post the FG and the end so we have an idea of the alcohol content. I've got the labels sorted already and the names I'm still working on.

Obviously this has been done before.

I will keep an on-line account of the brewing of Turbo Juice (whatever this may be!).

 Let the badness commence!

I've got six gallons of this stuff brewing. All individual gallons and slightly different ingredients. All brewing away like a mad thing on a mad day in a mad place!

Gallon 1: 3 Ltrs Apple Juice (Lidle)
1 Ltr Pineapple Juice (Asda)
500g Honey (Asda Cheapest)
250g Muscovado Sugar.
Cinnamin stick + 2 cloves
SG 1.85 (oops!)

Gallon 2: 3Ltrs Apple Juice (lidle)
1 LTr Pineapple Juice (Asda)
400g Honey (Lidle Forest Honey)
250g Muscovado Sugar.
Cinnamin stick + 2 cloves
SG 1.85

Gallon 3: 3 ltrs Cranberry Juice (Lidle)
1 Litr Cranberry and Blueberry (Asda)
500g Honey (Lidle WIld Flower Honey)
SG 1.60

Gallon 4: 2ltrs Cranberry Juice Lidle
1 Ltr Cranberry and Blueberry (Asda)
1 ltr Apple juice (Lidle)
500g Honey (Lidle Forest Honey)
SG 1.65

Gallon 5: 3 Ltrs Apple Juice (lidle)
1 Ltr Pineapple Juice (asda)
500g Honey (Lidle Wild Honey)
250g Muscovado Suger
SG 1.80

Gallon 6: 2 ltr Apple Juice (Lidle)
1 ltr Pineapple juice (asda)
1 Ltr Cranberry (Lidle)
500g Honey (Asda cheapest)
SG 1.70

All going smothly so far. Fermentation started about 30 mins after being laid down and its going like a rocket now. Will get some photo's on later. The room is at 24 C. It's so warm outside it's hard to get the temp down any. Got a weather station so using the inside temp recorder beside the demijohns. That way I can record the max and min temp ranges.

Does anyone see any problems so far? :?:

Right! I have taken some pics. Some are in the preparation phase, others just after completion and yet more about 24hrs later.

This link will take you to the album where there are 8 photo's.

If you look at photo 3, the demijohns are organised from the back row left - right as batch 5,2,1.
The front frow from left - right is 6,4,3.
You can compare these with the recepies above.

Picture 4 shows the indoor thermometer and humidty sensor.

Not sure yet on the whole putting pictures into the forum bit.

Hope it works and if it does let me know what you think.

It's incredible when you think we are just coming up to the 24hr mark now!

Did you go and buy those Demijohns and bottles brand new 8)
I find that i need 8-9 bottles per demijohn and i prime with a heaped teaspoon of granulated sugar in each bottle then i use a syphon tube with a bottling stick attached for easy(easier  ) bottling

Get some pics of the yeast at work if you can

The bottles I got brand new and i'm now gathering up used bottles. I really like the bottles of Aspinals cider, real nice shape to them.

The demijohns I had I've another dozen or so. Bought a load a year or two ago at an auction form £1. Always new they would come in handy again.

I'll try and get the close ups of the yeast working. :)

Can you up load video's? I could take a 3GP clip of it.

Got a photo of the yeast in action. Held the demijohn up to the window and took the snap. Room starting to smell like a brewery.

What do you think?

Some of the batches are almost fermented now (1,2 & 5).

The smell in the front room is just wonderful! 8)

Is it wise to run this nectar through a filter before bottling or will that affect the re-fermentation in the bottle?

Should I prime with sugar or apple juice?
