Looking at getting into TC as I haven't got any demijohns or water bottles I'm tempted to use those plastic 15l water containers used for camping that I have "laying around" the only problem is the bung is too small to fit the neck so could I ferment without airlock - I usually primary ferment beer this way befor racking in secondary without issue planning to ferment in the kitchen or would I need to stop airborne bacteria getting in from what I've seen read on fermenting TC there's so much trying to get out that I doubt anything be getting in!

You don't need an airlock to prevent airborne bacteria or wild yeast getting into your brew (any brew, beer, TC or otherwise).
Simply cover the container-entrance with something like cling-wrap or a cotton tea-towel and hold it in place with an elastic-band, that will prevent any nasties getting in but still allow the C02 to escape.
Beer fermented under a tea-towel was very common 20-30 years ago, and I never use an airlock now, just cling-wrap on everything I brew.

Put a pin hole in a balloon and stretch it over the neck.
