Re: Tea wine
I made this, sort of averaged from several tea recipes
2011-04-05 10 Earl Grey teabags and about 1/2lb of chopped raisins into 1.7litres near-boiling water; Added another 1.7 litres boiling water and stirred in 1kg sugar; Left to cool.
At 24C, added 2tsp citric, 1tsp nutrient, and packet Young's general red wine yeast.
2011-06-07 Racked. Was clear but sediment stirred up easily, quite a bit transferred; Sneak taste: pleasant white, slight sharpness
2011-07-17 Bottled. Pleasant taste, bit too much tea-ness now and then
2012-03-25 Tastes pretty good now, nearly a year old.
It's not bad but it is a bit obvious it's tea. Mind you, what's wrong with tea, eh?
OTOH... I recently tried my hand at the craze for fruit teabag wine. Really good, simple.
2013-06-12 20 Twining's Cranberry & Raspberry teabags infused 30 minutes in 2 pints freshly boiled water; 155g raisins and 70g sultanas chopped with hand blender (too fine), into pan with 1kg sugar, short tsp tannin, 1 pint boiled water, brought back to boil; All (bar bags) to bucket with 2l Lidl red grape juice, 1/3 tsp citric and 2/3 tsp tartaric and 1 tsp nutrient; Left to cool to pitch temp
Hydrometer: 1.124, Refractometer: 27.4
Pitched half pack Gervin D, rehydrated as per
2013-06-17 Sieved to demi, added 500ml water, room for more
2013-06-19 Topped up
2013-xx-xx Racked with sulphite
2013-08-27 Racked and stabilised
2013-09-04 Bottled. Tasty. Perhaps a touch too much sugar
