sterilizing or cleaning apples for cider

After a cracking result last year using Lidl aj plus some fresh picked bramleys for a bit of aroma and fresh flavour, I thought I'd have another go.
Last time I dunked my apples in boiling water for 60secs to sterilize the outside, then chopped 'em up and dumped them straight into the aj, when chopping them it was clear the boiling had started to cook the outside few mm's of flesh and I reckon I'll have lost a fair bit of aroma/freshness this way.
How do you clean your apples?

I am wondering about a wash in warm water to remove dirt then liberal spraying with starsan, would that do the trick?

Just wash them in a sodium met solution and drain any excess off.
