Saki
Has anyone got a recipe for saki or rice wine. I FOUND ONE ON THE WEB , BUT IT INCLUDES ['CHINESE YEAST BALLS", AND NONE OF THE ORIENTAL SHOPS HAVE EVER HEARD OF THEM. Apart from thaty it seems easy to brew.

Made properly, it uses a bacterium to break down the rice starch. This is available online, but I can't recall what it's called. For some reason I can't remember, amylase doesn't quite cut it.

I'm sure I seen a Whitelabs or WYeast Saki yeast on a list. This might have it in?

It was very good, I eventually found an old Chinese woman in astore who knew which shelf it was on.3 dollars for about 10 balls, 2 balls per gallon.
