Has anyone bottled ther TC in empty 2L Coke bottles?

Nope, but no reason why you couldn't.

I've bottled mine in 568mil glass or 500ml PET bottles but have had no trouble with sediment at all.

The last batch I made which I put in glass bottles I got quite a bit of sediment, don't know why.

Yup, and it works fairly well, but not (no idea why) as well as bottling in glass.
Most of my TC has had some sediment, but (most of) the yeasts I've used have glued themselves to the bottom of the bottle well.
